Cheeses and abbey shop
The cheeses history in intimately linked at the Abbey's History, in order to ensure the livelihood to the community as the whole. Resp corresponds tectful of the rule of Saint Benoît, the Sisters transformed the barn into a modest cheese plant. The Belval Sisters are working the cheeses and commercializing them, starting with locals markets, and then, in dairies in the Paris region, to live independently. Maturing methods, that have been passed over the years, keeped the artisanship of the past. Whereas the management of the activity corresponds to the process of a company today. The Belval cheeses are classified by the "Conservatoire National des Arts Culinaires" at the inventory of the local heritage, which is a sought-after product in the major dairies of Europe. The work at the cheese plant marks the days, with the prayer and study, of Trappistines.
After the departure of Sisters, the association kept the tradition of the maturing cheese.
Abbey cheeses : "Le Trappiste", "La trappiste bière " ripened with dark beer, "Le Ternois" ripened with lager, "L'Enclos de Belval", the latest cheese with orange-coloured rind.
Abbey shop : In a former farm built in white stones, the Sisters opened a pleasant shop, where it's possible to buy handicrafts artefacts coming from french or belgian monasteries.
Openong hours : Monday, Wednesday, Thursday, Friday and Saturday18 p.m. 10 a.m. to 12 p.m. and 14.30 p.m. to 18 p.m.and Sunday 14.30 p.m. to 18 p.m.
